Tuscan Meatballs
Yummy chicken and spinach meatballs. This makes alot of meatballs, well atleast for us it does. They make good meatballs sandwiches. And area also good cold.
INGREDIENTS
1 package (10 ounces) frozen chopped spinach, thawed
1 pound ground turkey (i use chicken)
1 egg
1 cup seasoned bread crumbs
1 cup grated Parmesan cheese
2 handfuls of shredded mozzarella cheese (about 2/3 to 3/4 cup)
1 tsp garlic salt
black pepper to taste
1 to 2 Tbsp olive oil
12 ounces spaghetti
INSTRUCTIONS
Makes: 6 servings.
Prep: 30 minutes. Cook: 7 minutes.
Bake: at 350 degrees for 20 minutes.

1. Heat oven to 350. Squeeze water out of spinach. Mix spinach, turkey, egg, bread crumbs, Parmesan, mozzerlla, garlic salt, and pepper in a bowl. Shape mixture into meatballs (about 30.)

2. Heat oil in a large frying pan over medium-high heat. Brown meatballs, about 2 to 3 minutes. Once browned, cook in oven to finish cooking meatballs, about 20 minutes. (If you don't have an ovenproof pan, use a baking sheet.)

3. Once meatballs are baking, bring a large pot of lightly salted water to boiling. Cook the spaghetti until al dente, following package directions.
